"Sawara(鰆)/Seer fish" makes a habitat in off-shore from Japan to Australia
and swims into Seto Inland Sea(瀬戸内海) to spawn from May to June.
As for its body, Sawara/Seer fish has bunches of bluish brown dapples on its back.
Sawara/Seer fish is a fish which is called by different names as it grows larger.
It is called Sagochi which is smaller than 50 cm, while it is called Sawara which is larger than 50 cm.

Recipe
Its flesh is white and soft. Its taste is simple and bland. Sawara/Seer fish is evaluated as high-quality fish.
As for recipe, it depends on region.
Kanto people prefers Shioyaki(塩焼き)/Salt-Grilled, Saikyo-Duke(西京漬け).
Kansai people prefers Sashimi(刺身), Teriyaki(照り焼き), Shioyaki(塩焼き)/Salt-Grilled, Saikyo-Duke(西京漬け), Kabura-mushi(かぶら蒸し) , Oshi-zushi(押し寿司).
Especially, Sawara/Seer fish sashimi is of extra quality at its season.
There is a saying "You can't help but lick a plate on where Sawara/Seer fish sashimi is placed."

鰆 : "魚" means fish. "春" means spring. "鰆" derives from season of Sawara/Seer fish.
"鰆" is used as a Kigo(季語) for spring in Haiku(俳句). It is said that Sawara/Seer fish is a fish which herald spring.
